Chicken Bruschetta

Ingredients

5ml olive oil, divided

1 boneless, skinless chicken breast

80g cherry tomatoes

5ml balsamic vinegar

10g fresh basil leaves

1 small cloves garlic, minced

1 small onions, chopped

Directions

Add half of the oil to the skillet and cook chicken over medium heat.

In the meantime, cut basil leaves into slivers and prepare the vegetables.

Heat the remaining oil and sauté garlic and onion for about 3 minutes.

Stir in basil and tomatoes for about 5 minutes.

Stir in vinegar.

Cook until heated through and serve the chicken topped with onion and tomato mixture.
